The terms "jam" and "marmalade" are clearly regulated by law. Both the fruit and sugar content of a jam are precisely defined: A strawberry jam must contain at least 35% strawberries (at least 45% for an extra jam) and have a total sugar content of at least 55% in the end product. Jam may only be made from citrus fruits, for example oranges or lemons. The term "fruit spread" is not regulated by law and is used, among other things, for products that contain less sugar and more fruit than jams and marmalades. |
